Bahamian-Style Conch Fritters

I have to admit Caribbean Island people love seafood. In Haiti a nice steam or fried fish with a side of plantains or rice can go for breakfast, lunch or dinner. Okay the rice more with dinner but If you visit any of the Caribbean islands or your local Island restaurant, your options for seafood are wide from steamed to fried to sautéed in sauce.

In Bahamas, or i should say one of my favorite Bahamian appetizer is conch fritters or Lambi as we Haitians called it. So forget the boring cheese balls or wings appetizers, and go for this instead.  A perfect option for a cocktail party or brunch on the patio or balcony.
Conch Fritters Ingredients:

2 med. conch, clean & remove skin
½ small sweet pepper
1 small onion
1 stalk celery
1 egg
1 cup milk
2 T. tomato paste
1 t. baking powder
1-1/4 cups flour
1 t. hot sauce
1 t. salt
Thyme

NOTE:  Where conch is not available you can substitute lobster or crab.

Directions:

Put conch, sweet pepper, onion & celery through a meat grinder.  Add remaining ingredients to make a batter. Drop batter by tablespoon into hot oil and fry for approx. 10 min. or until golden.

Serve with cocktail sauce:

½ c. ketchup, ½ t. Mayo, 1 t. hot sauce, mix & serve.
